On a whim, I threw some gelatin into my pumpkin muffins, hoping they'd help replace eggs and gluten.

Way. Too. Soggy. Shame.

I think I'll try dehydrating them, then freezing them for future crust use.

Gelatin only sets when it's cold tho, so that makes sense. Might harden up with the freezing...

It's used in small amounts in some GF/Egg-free recipes. But *small* amounts, not a whole packet of knox. And in *bread*, not quickbreads/muffins. Oops.

The muffins are cool now. And do not hold together. I bet they'd be fantastic dehydrated or frozen.
