I made the Namaste spice cake tonight (carrot cake variation).

I made cream cheese icing/frosting--purple, per the kiddies' request.

SO GOOD.

Real review to follow, probably.

8oz cream cheese, softened. i didn't soften mine long enough, so i ended up with lumpy frosting. Like I care. Little spots of richness.
one stick (1/2 cup) butter, softened
a box of confectioner's sugar (1lb?)
a teaspoon or so of vanilla
a bit of milk (I eyeball it. Kinda gooshy that way, but I'm guessing it's about 3TB)

Mix. I let the kitchenaid do the work.

If you like it lumpier, add pecans and/or coconut.

And when mixing under the guidance of [livejournal.com profile] babyrapture and [livejournal.com profile] baby_mo, add red and blue food coloring until the perfect shade of purple is attained.

the cake is super moist with the carrots--it doesn't need frosting at all, but why go without? ;)

Oh I adore these cakes. They're so easy and yummy.
