Scones

A few weeks ago, Whole Foods had a sale on some of the mixes by Gluten-free Pantry. I picked up a couple, including the muffin and scone mix.

Now, I've been craving devonshire splits, which are a more bready scone, not a crumbly scone. I've been good, however, and haven't made them. I finally decided that I could do a crumbly scone. So, I pulled out the package tonight. I mixed the dough and then folded in some dried cherries. After 15 minutes in the oven, I had scones. They're very crumbly, but they're not too gritty, which is my major complaint with most rice bread products.

They're heavenly with double devon cream.

Soy-free, wheat-free, gluten-free. Quite tasty. My next batch will have some almond flour or chips folded in with the cherries.

Ingredients: Rice flour, cornstarch, potato starch, sugar, gluten-free baking powder, baking soda, xanthan gum.

Yay for crumbly but not too gritty!!

I've never had double devon cream, but it sounds heavenly.

Harris Teeter, in the cheese islands.
Whole Foods in the cheese cooler (cheese/fish section).
Rivanna Ridge/Pantops Giant, in the cheese island near the produce.

Foods of All Nations probably has it. The little market by the blue ridge pig in nellysford also has it.

Cheese Islands. I hadn't thought to look there. I just kept myself exclusively to the main dairy cases.

(would offer you some, but mine are probably completely full of things that will make you croak. but they are soft and crumbly, and not gritty at all. if you'd like, with your help and advice on ingredient substitutions, I'll make some for you sometime.)

they're only gritty when one can't use wheat in them. ;)

and mine need to be soy-free and wheat-free, which makes them more of a challenge. [livejournal.com profile] jb98 has a good wheat-free recipe.
