Does anyone have a wheat-free, soy-free recipe for a brown gravy? I tried a mix from Road's End Organic for Golden Gravy, but the rice flour in it is too grainy for my palate. I just want some poutine... and I need a decent golden or brown gravy.

I have an onion dip packet which is soy-free and wheat-free, but I don't know how to make gravy without using wheat flour. I also have two soy-free miso pastes, one of which is lighter, one darker.

EDIT: shortly after making this post, I wandered into the kitchen and spied the cornstarch. I just made the gravy by rote after that point... onion dip mix, cornstarch, water, heat, whisking... then added tamarind chutney at the end. poured over fresh french fried potatoes and fresh cheddar curds. YUM!

Rice flour was the problem with the first gravy pack--it's too grainy/pasty for me. I can't stand papery/sandy textures, especially not the sandy paperwad texture that is rice flour. ;)

I have a pretty decent gravy recipe but then looked it over and it requires 4 tablespoons of low or reduced sodium soy sauce. . . I wonder if that could be substituted.

Hrm, this wouldnt be friendly for the vegetarian/vegan folks but maybe it'll work for you?

Soy Sauce Substitute

1-1/2 cups. boiling water
4 tbsp. low sodium beef bouillon
Pinch pepper
1 tbsp. dark molasses
4 tbsp. cider vinegar
1 tsp. sesame seed oil

Combine all ingredients in a bowl, stirring to blend thoroughly. Pour into jars. Cover and seal tightly.

May be refrigerated indefinitely. Shake well before using.

The recipe I have for the gravy calls for

-1/2 cup vegetable oil
-3-6 cloves of garlic (squashed and minced)
-2-3 slives of yellow onion (chopped)
-1/2 cup of all-purpose white flour
-4 teaspoons of nutritional yeast
-4 tablespoons low- or reduced-sodium soy sauce
-2 cups water
-1/2 teaspoon sage
-1/4 teaspoon ground black pepper
-1/2 teaspoon salt
-5-6 white mushrooms (sliced) (optional)
-extra flour or cornstarch for thickening (optional)

Cook the garlic and onion in the vegetable oil in a small sauce pan for 2 minutes on medium or medium-low heat, untill the onion is transparent.

Add flour, yeast, and soy sauce to make a paste.

Add the water gradually, stirring constantly.

Bring gravy to a boil on medium or medium-high heat (to thicken).

Add pepper and stir in the sliced mushrooms, also, add salt as desired.

Thanks, sweetie, but I am vegetarian. I do have a soy sauce sub, but my problem with making gravy was with flour--which your recipe also uses. ;)

I managed to survive by using cornstarch and a mix. Poutine was had. YUM!
