Nachos and Buffalo Wings
Feb. 1st, 2004 09:59 pmWe've had yummy snack foods and have enjoyed the commercials thus far.
this nacho dip recipe turned out well. for posterity, i'll post it now with comments.
NACHO DIP
Layer the following:
1 (16 ounce) can refried beans mixed with 1 envelope taco mix I used a 15oz can of Trader Joe's salsa style refried pinto beans and a packet of organic taco seasoning
1 large container sour cream mixed with 1 envelope dry onion soup mix I used a 16oz sour cream and 1 envelope of Fantastic Foods onion soup/dip mix
1 (4 ounce) can green chiles, drained
Chopped black olives i didn't use these--i kept them out separately, since i'm the only one who will touch 'em
Diced scallions or any mild onion half a small yellow onion
Diced tomatoes misheard boy--used half a 14.5 oz can of diced mexican-style tomatoes (lime juice and spices)
Mozzarella cheese, grated used cheddar--we had no monterey jack and i don't use mozzarella on nachos
1 (6 ounce) can tomatoes and green chiles, drained used the rest of the can of tomatoes
You may cover and refrigerate at this point. Heat thoroughly in a 350 degree F oven until bubbly, and serve with tortilla chips.
I don't know how long it took. We used organic Tostitos, since they're soy-free. blue corn chips are yummy. I should've used spicier tomatoes, but i didn't know how it would turn out, so i didn't over-chilli it. ;)
For the guys, I made the buttermilk-parmesan and blue cheese dressings found in the Betty Crocker cookbook. I added some extra seasonings to the buttermilk dressing to make it more ranch-like for
nothingoth.
explodingcat made his father's hot wings recipe. he thinks his dad found it in a newspaper or magazine. we have no idea, so can't give a source, but i'll share it. for those who care, this is obviously *not* vegetarian. i might try broiling some chicken-style gluten with the sauce sometime soon, though.
Buffalo Wings
3 lbs chicken wings
garlic salt
1/4 c butter
3/4 c tomato juice
1/2 c Franks Red Hot Original cayenne pepper sauce
1/2 tsp black pepper
1 tsp red cayenne pepper (more if you want more heat)
Wings: Preheat oven to 400. Foil on a baking sheet. Grease foil
lightly with oil (so chicken doesn't stick to it). Place chicken on
baking sheet and sprinkle with garlic salt. Bake for 20 minutes. Turn
wings over and bake for another 20 minutes
Sauce: Combine all other ingredients in a pot. Bring to boil. Turn
down heat and simmer for 10 minutes.
Pour sauce over wings. Serve with blue cheese dip and celery on the
side.
