Chronic illness/chronic health issue journals I read/post to/am a member of:

allergies - kind of quiet, but people will speak up now and again.
autoimmune - fairly active
chronicfatigue - moderately active
fibromyalgia - very active
fmspagan - quiet, but friendly
foodallergies - quiet, but very friendly and supportive (I currently run it, but I'm the silent dictator type of owner/maintainer)
mcs - quiet, but useful for venting
ouchygrumpy - becoming increasingly active
sicklygoth - fairly active
takingiteasy - moderately active

and not illness oriented, but definitely illness-involved:
homewardbound - folks who are home-bound, whether by illness or situation
and
naturalmed - very active

also
breasthealth - moderately active
contrabanned - becoming more active, very friendly and supportive
menstrualhut - incredibly active
vaginapagina - incredibly active

and, not really related, but fairly cool:
veggie_blog - new journal. this one is for vegetarians to post what they've fixed that day. i'm sure recipes will be welcome, but it's mainly so folks who are stuck in a rut get some new ideas and to show that vegetarians eat more than salad and tofu.

i think i'll join you on veggie blog...sometimes i like to eat meatless, and i never have very good ideas...not to mention, i had a yummy veggie lunch today.
