A few nights ago, I wanted comfort food.

Folks who know me know that my comfort food involves potatoes and cheese. Mushrooms, too, but if I'm making something for boy to eat, I have to forgo them.

So...

I was super tired and achy. I asked boy to wash and slice some potatoes and to wash and peel two scarlet turnips and a parsnip. I chopped the turnips into chunks (one was HUGE) and sliced the parsnip. I chopped up a few baby carrots. Tossed 'em all into a casserole dish. Then I looked at the clock and saw that it was seven. We were hungry. So I added some water, and microwaved the veggies til they were mostly cooked. Then I added a white cheese sauce I had on the stove. I often use Mueller's pasta macaroni and cheese sauce recipe when cooking. I added onion powder (too tired to slice an onion and they make Tom cry, so I do it) and extra pepper... and garlic... We drained the veggies, tossed 'em back in the casserole, then poured on the sauce (I'd made it with organic white colby) and topped it with bread crumbs and organic white cheddar. Baked at 350 til brownish on top.

YUM. So good. I could've used less turnip and more parsnip, but I wanted to use the turnips (the parsnips will keep longer).

(btw, Mueller's Vodka sauce recipe is nice and basic, but I *always* add herbs so it doesn't taste like canned spaghetti w/sauce.)

mmm the vodka sauce recipe sounds delish!

and when i still ate cheese, i used to make my mac n' cheese with 1/3rd cheddar, 1/3rd mozzarella, and 1/3 dill havarti. :)
