Another day, another dish of enchiladas. Today, I made a red sauce with roasted red & yellow peppers and roasted poblano peppers. I think our local farming brothers planted those poblanos a bit closer to their much spicier peppers, because they are much hotter than poblanos tend to be.

I have a cold of some sort. Last night I was picking through boxes, hoping to find my orange beret. I found it, but my head seems to have grown since 1993. Ah, well, I'll use flippy clips. Anyhow, I likely kicked up dust, which is what I blamed for my congestion and sore throat last night. It didn't go away after a shower or a night's sleep with antihistamines, though, which didn't bode well. In fact, I was quite congested and sore of throat this morning.

I've been self-medicating with copious amounts of tea. I've had some Mucinex, too. I'm feeling better, but I'm not sure I should actually leave the house. There are so many bugs going around, I don't want to contribute. Then again, no fever, no aches beyond my normal pain levels. I'm tired, but when am I not?

I have holiday shopping to do. Hmph.

My last few poblano purchases were EXTRA SPICY OMG. I actually prefer to just get them dried and rehydrate them (with chicken stock).

Oh, I buy them when they're in season, which is right now in these here parts. Otherwise, it's ancho time! I agree, dried/smoked and rehydrated = the bomb.

The sauce was a bit too pepper-bitter for me. I miss tomatoes. It would've been better if I'd had some sour cream on hand, but I'm out.

(I did verde earlier this week. And while tomatillos have a similar flavor profile to tomatoes, they still aren't the same and don't have that rich-smoky yumminess that the burnt edge of a tomato-based sauce gets in the oven.)

I agree that tomatillos don't cut it. I'm so sorry that you don't get tomato sauce.


But... not I want enchiladas. Dripping in cheese- can we say comfort food? :P

Those sound so good right now. But your Dad insists on dragging me to Souper Salad today, so I don't think they are in my future.
