tonight's dinner
1 bunch dandelion greens, washed and sliced into strips
two-four servings capellini
garlic, minced (two large cloves)
crushed red pepper
olive oil
onion, chopped
sage (1/2 teaspoon, maybe?)
salt/pepper
1 can small white beans, drained
1 yellow squash, sliced into 1/4 to 1/8 inch slices, which are then quartered
set a large pot of salted water on to boil. when it reaches a boil, toss in the greens. boil for seven minutes, then drain (RESERVE THE WATER) and rinse in cold water. squeeze greens out, fluff with fingers or fork. return water to stove and bring back to a boil. add pasta to the boiling ex-greens water.
meanwhile, heat oil in a large skillet. toss in red pepper and onion. when onion is almost transluscent, add sage, garlic. when you think about it, add beans and some more oil... add the squash and cover the pot, turn the heat to low. add greens when the pasta is almost done. then drain the pasta and add to the big pot. season with salt and pepper.
this is yummy with a little parmesano and/or nutritional yeast. :9

a bunch of greens is anywhere from 1/2 to 1 pound. :) closer to a 1/2 lb these days.›
