i'm making baklazhani (eggplant). YUM.

it's a dish one loves best when one is vegetarian and has been in moscow for a few days and is quite hungry.

eggplant, onion, tomato, pickle, apple... cooked down for a couple hours and then seasoned with salt, pepper, and wine vinegar. if anyone wants the recipe, i'll post it.

please, please?? as a wistful ex-vegan, i would love to have it...sometimes i think of returning to my former ways...well, i think of becoming vegetarian....i don't know if vegan would fit as well anymore...or if i'd be as willing now to forgo all dairy...but i'd love to see the recipe...i'm trying to expand my food horizons again. thankies much!

i saw a comment you made in a friend of a friend's livejournal about alternatives to soy and peanuts for vegetarians, which i found interesting and informative since i'm allergic to peanuts, and kinda sensitive to soy.

If you have any favorite recipie sites or anything please speak up! and if not that recipie you mentioned in this post sounded kinda yummmy :)

well, i pretty much look for recipes from cuisines which don't use soy much. since i'm vegetarian, it can sometimes be a challenge, but i manage.

i can usually find safe mediterranean food (especially lebanese, but greek is also nice), russian food can be yummy, indian, italian...

for recipes, i like alt.food.vegan and rec.food.vegetarian-cooking (i think that's it) on usenet. sure they use a lot of soy, but i can substitute or just ignore those recipes.

http://www.fatfree.com has lots of interesting dishes and meals.

i have tons of cookbooks and magazines. i just look for stuff that sounds good and looks safe. :)

i avoid a lot of sub-saharan african cuisines (though ethiopian is often safe) because of peanuts. no, they're not ubiquitous, but they show up quite often in restaurants in my region. i also avoid thai for this reason. some thai places are safe, but others use lots of peanuts, fish sauce, etc. and soy, of course, is quite prevalent in thai food.
