How do you test to see if you have a gluten-allergy?

A wheat allergy can be tested like any other allergy: skin prick test (not reliable), RAST blood test (not 100% reliable, but my method of testing) and elimination/introduction/observation (another good method).

Celiac disease involves several blood tests and an endoscopy, though some doctors settle for elimination, reintroduction, and observation. The blood tests can be inaccurate if the lab sucks, you're on steroids, or you're IgA deficient. I have symptoms when I eat it. They go away when I don't eat it. They return when I eat it, so my doctors have decided that I'm gluten intolerant and that it's likely celiac disease. I can't go back to eating gluten to have the blood tests because I have a traditional wheat allergy, as well.

Sure thing! I made the lemon glaze with the lemon I zested. It was a sizeable lemon (I could hold it in my hand, but not close my fingers) and had the perfect amount of juice. Yum Yum.
