The blood tests can be inaccurate if the lab sucks, you're on steroids, or you're IgA deficient. I have symptoms when I eat it. They go away when I don't eat it. They return when I eat it, so my doctors have decided that I'm gluten intolerant and that it's likely celiac disease. I can't go back to eating gluten to have the blood tests because I have a traditional wheat allergy, as well.
