Lentils and quinoa with onion and tomato.
Aug. 15th, 2003 07:12 pmPut a couple teaspoons olive oil in a saucepan, heat. Add about 1/2 tsp cumin seed. Add one small red onion, diced. Stir a bit. Add some garlic pepper (maybe 1 tsp? maybe less?) and a half teaspoon or so cinnamon and a bay leaf. When the onion is more softened, add 1 cup rinsed red lentils and about 2 cups broth. Then add about half a chopped tomato (I had to eat the rest... it was a 3" ripe ripe ripe red tomato). Heat to boiling, stir, reduce heat. After about 10-15 minutes, the lentils should have softened, add 2/3 cup quinoa (also well-rinsed). Return to boiling, then reduce. Add another cup of broth at some point. Keep cooking til it's done (another 5-10 minutes).

and always rinse it well, to remove any traces of saponin (natural seed coating--rather bitter).
