Tonight.
I made a simple white cheese sauce (something similar to Mueller's mac & cheese sauce, but I used Cabot's Smoked White Cheddar). I cooked about a half cup or so of multi-color veggie macaroni, drained it, then dumped it in a casserole dish with a bag of frozen cauliflower and broccoli flowerets (I didn't have much energy tonight). I poured the sauce over, sprinkled extra cheese on top, and shook some bread crumbs over, then baked it for about 35 minutes at 375F.
Meanwhile, I had half a tomato sprinkled with salt and white balsamic vinegar. I also made a pasta salad to keep in the fridge (garlic, onion flakes, basil, oregano, parsley, olive oil, white balsamic, balsamic, neptune's dream pasta shapes, tomato). I just realized I forgot to add the roasted red pepper. Best go do that. ;)
I don't cook protein for every meal. I snacked on some mushroom Field Roast, though. And I think my husband had some nuts.
Last night, I made lumpia with cabbage, water chestnuts, bean sprouts, chicken-style seitan, no-soy sauce (marmite based), carrots, onion, and garlic. And I made a sauce out of no-soy sauce, brown sugar, cornstarch, and water. Very yummy. I think we had some other veggies, too, but I can't remember.
