an infuser's worth of decaffeinated ceylon orange pekoe (broken), one clove, one half stick of cinnamon, the contents of two green cardamom pods, a teaspoon or so of sugar, just nearly boiling water... steep, add milk, sigh contentedly and be happy.

yep, i like my chai masala. Of course, I neglected to add a peppercorn, but peppercorns can make my heartburn worse, so that was probably a good thing. When I have guests, I use evaporated milk instead of milk. And I think I'm going to make a spiced sweetened condensed milk to have on hand.

it makes chai masala--spiced tea.

ceylon orange pekoe is a type of tea. ;) most lipton tea (blech) is orange pekoe, but not terribly high quality. i buy orangic pekoe in bulk. ;)

oooo and now that one sounds yummy too....today's a warm day but it's starting to become fall up here, and I'll be drinking hot tea instead of iced again soon...now I just need to find someplace here in sticksville to buy spices and herbs...most people here know pepper and salt, and with italians here we have oregano and basil and garlic....but that's about it.!
