Last night's dinner was simple, but excellent.
Leftover brown rice and homemade refritos frijoles, mixed together and moistened slightly while heating, garnished with chipotle tabasco.
Roasted summer squash.
Grilled chicken breast (brined with pepper, tarragon, agave) topped with homemade chayote salsa.

The salsa was simple. I diced a purple sweet pepper and chayote, tossed with cumin, smoked sweet paprika, oregano, olive oil, and lime juice.

Ronan liked it, which is awesome. I love that my kiddo will eat just about anything. He's not big on cheese/dairy, but other stuff is great. :)

Tonight's dinner will be shredded grilled chicken breast tossed with the leftover salsa, served with sour cream and shredded cheese and corn tortillas.

And we might just roast some more squash.
