Late night, feel sick, want chicken recipe:
Pour a bit of water into a pan. Maybe a cup? Add a frozen chicken thigh, rinsed. Stare at the saucepan, look in the fridge. See half an onion. Pull it apart slightly and toss it in. Cut a sprig of rosemary off the branch on the counter. Stare at the liquid in the pan. Look in the fridge to see what wines need drinking. See that there are none, but there's some sherry. Shrug and pour in a couple ounces of sherry. Add a few pitted kalamata olives and some sundried tomatoes. Add some garlic pepper and some salt. Bring to a boil. Cover and simmer for 20-30-40 minutes (duration of one's nightly footrub).
Go look at chicken. Think about starch. Add about 2/3 cup of the trader joe's microwaveable pre-cooked brown rice. Stir in, cover, simmer a few minutes til rice is warm.
