Chebe just shot themselves in the foot. Why, do you ask? Well, they finally printed directions for making wraps/flatbread on their packages. And I finally tried making them, using my handy dandy tortilla press. I mixed as usual, adding extra thyme and some onion powder, plenty of parmesan . . . flattened them in the press (turning and repressing about four times). . . cooking them on my cast iron griddle.

Slather with mayo, roll up with some smoked turkey . . . DAMN!

They are excellent. Why is this so bad for chebe? A package of chebe bread only makes four wraps/tortillas. And a package of chebe is pricey. This is the kick in the ass I needed to stop being so lazy and just mix up my pão de queijo from scratch. It's not even hard or time consuming to make. I just have to, y'know, take time to actually *measure* instead of cutting open cellophane and dumping the contents into the bowl of my KitchenAid. I'm pretty sure I can skip the first step of that recipe, too.

Dead fowl was just convenient and needed to be consumed before it was wasted. It would be fine without anything at all. Or with hummus, mayo, sprouts, sun-dried tomato, olives, spinach, and avocado.

Oooooo I was looking for a wrap recipe! Why do you need a press? I have no idea how to make them!

The dough can be very stiff and hard to work. Rolling it would use up all of my energy reserves for a week. The tortilla press makes it easy--form ball, press, toss on griddle!

I love pae de queijo. I think after I move I need to start making it again. I remember my ex's mom getting big batches from a woman, and between my ex and I, it would be gone in a matter of a few days :)
Ah, happy food memories.
