i'm vegetarian... i know next to nothing about cooking meat.

my husband (boy) is slowly adding foods back into his diet. tonight, we grilled a boneless pork loin (free-range, no antibiotics, no addities) on the foreman grill.. we also grilled some green onions (did those FIRST, so i could eat some)... he liked it a lot, but thinks that cooking the pork with pineapple would tenderize it nicely.

we know he can roast/bake it with pineapple. does anyone know how long he could marinate it in pineapple juice if he wanted to grill the loin? we'll buy another tomorrow for him to try.

i marinate mushrooms for a day... i suppose meat takes less time, since 24 hours would probably break it down too much to cook in one piece. two hours? less? 6 hours? any idea?

so, far, he's been fine with rice, potato, broccoli, green beans, onion, garlic, cabbage, tomato, leek, pineapple, pear, apple, beets, carrots (cooked only), celery, black pepper, bay leaf, turmeric...

most of those, with the exception of the pinapple, pear, and apple, were cooked.

any thoughts? recipe suggestions? we don't want to add more than *one* new item into his diet at a time. no dairy, chicken, mushrooms, vinegar, eggs, wheat, corn, or fish yet. he's still waiting on test results...

and the following are not allowed in the home: soy and papaya. and peanut isn't very welcome, either.

Pineapple juice isn't that acid, and pork isn't delicate like fish, so even overnight in the refrigerator would probably be fine. I'd marinate it a couple of hours, and poke the meat with a fork before putting it in the marinade.
