Mmmm, making another batch of my version of AKA Frisco's Exploded Potatoes. (AKA Frisco's is a DC and MD (Frederick) sandwich/salad lunch spot).

It's very yummy. First, I bake potatoes. Sadly, I only had small white potatoes, Idaho Russets work the best. That's okay, these are fairly yummy, sweet, and creamy potatoes--almost like a white version of yellow yukon or whatever.

Then I mash them coarsely with butter and throw them into the crockpot. I rinse some frozen broccoli (chopped) in a colander with hot water from the faucet (I always rinse frozen veggies to wash any ice off, I dislike the off taste), then add that to the crockpot. Meanwhile, I've been sauteeing onions in butter to near caramelization, I dump those in the crockpot. I add some ranch dressing (I use Annie's Cowgirl Ranch, b/c it's soy-free). Then I pour some milk in the bottle and shake it, pour that over the potatoes. Add lots of cheese (boy shredded some organic maple-roasted cheddar, i chopped up some australian 2-year cheddar--both are creamy white), stir in some minced garlic. Cook on high, so we can eat it tonight. I cook it on low for six hours if the crockpot is full. A vacation light timer comes in handy for this.

It's so good. So yummy. Frisco's has a meat version with bacon, too.
