rice and bean casserole
May. 13th, 2004 10:49 pmWhen I'm feeling better than normal, I'll whip up a casserole with whole ingredients. When I'm feeling blah, I use what's on hand and pre-chopped.
Today, I dumped leftover brown basmati rice from last night (about one cup) in a casserole dish. I added:
1 can salad beans (light red beans, dark red kidney beans, chickpeas), drained
1 can diced tomatoes with onion and green pepper
1 can creamed corn
I didn't have regular corn, so I figured I'd try the sweet stuff. ;)
I then shredded in about 1/2 cup total cheddar and chipotle cheddar (basically, a bit of sharp chedder that amounted to a few bites + some of the chipotle).
I thought about adding chopped chillis, but was too blah to open a can. I stirred everything together and put it in the oven for 45 min at 350.
It's quite tasty. I add chili powder or powdered ancho pepper to my dish, along with salt and pepper. Sour cream would also be good. It would even make a decent dip.
