I was bored. So I made a cheeseball. Wow. That was way too simple.

Of course, finding a *sturdy* soy-free, gluten-free cracker is not so easy. Maybe I can get some Glutino ritz-like crackers or Schar club-style crackers tomorrow. Yum.

In other news, [livejournal.com profile] explodingcat has demanded my mother's recipe for "cheeseball". It requires ham and in no way resembles a ball.

I've been making lots of (liquid) smoked almonds. Damn, that's also easy, though I need to perfect the smokiness. I think the bulk hickory salt from the Amish market might just be in order.

I should go clean the kitchen. And bake cookies for Yule. Or maybe just hide in the kitchen and eat salmon candy. That works, too.

But I don't make cheeseballs every day. And I have no celery. And can't do carrots. I bet cheesy balliness would be good on tortilla chips, though. And I know it's great on toast, especially EnerG tapioca styrofoam bread.

how does one make smoked almonds? I love smokehouse almonds but the ones at the store are always a little too full of crap / too salty for me. i'd love ot know how to make them at home.

There are lots of recipe for smoked/spiced almonds online. Technically, I think you'd need a charcoal grill or smoker. I use liquid smoke and some other spices, especially chipotle tabasco and garlic. In one recipe, I whisked egg whites til foamy, mixed in seasoning, then tossed with almonds. In another, I mixed the seasonings with olive oil. Spread in a shallow pan, roast at 250F until dry (if using a wet mix) or not yet burned (30 minutes, stirring every 10).

Some call for an overnight brine, etc.

Salmon candy is sweet smoked salmon using Yukon River salmon (king or chum). Brine, brown sugar, & alderwood smoke.

I am trying to not lick the computer screen, reading about the yummy goodness.

If baby gives me some breathing room today, I am hoping to prep for the feast. And maybe some oaty gingerbread in there too.

I too was thinking "Salmon Candy ? Whatnow ? Is that like the Danish Liqourice Fish ?" but that sounds tasty indeed.
