Roasted Golden Beets

1. Spot bunch of Golden Beets at grocery store. Quickly grab them, finish shopping, pay, go home.
2. Cut off beets with just enough of a greens-handle. Peel. Cut off rest of top. Slice.
3. Toss with olive oil, white balsamic vinegar, and place into a small casserole dish with a handful of peeled whole garlic cloves.
4. Cover with foil, roast at 375ยบ for 45 minutes. Remove from oven, let sit covered for 10 minutes.
5. Sprinkle with salt and enjoy.
(Tomorrow, I shall have beet greens.)
