(no subject)

crap. i boiled/soaked/rinsed my beans last night (small white beans)... then piled them in the crockpot with some other ingredients around midnight. i wasn't thinking, though, and tossed tomatoes in, forgetting that acidic food goes in *last*... the beans are STILL tough. did i ruin them? are they going to soften?

time to unplug the laptop (thunder), put on pants, and find a screen repair shop.

Beans are pretty fussy. I know that they often stay hard if they are old, or if you are cooking them in salty liquid. I don't really know how to fix them, though. Good luck...

depends on how acid it makes the mix.... just a little tomato will slow things down a little bit; a couple of cans of tomato puree will put the beans into suspended animation. And, of course, buffering the acid with another ingredient will help fix that. They're not necessarily ruined, just much slower.

a half lb of beans, two cups roasted veggie broth (no salt), two *small* tomatoes, half a medium yellow onion (about equal to the total tomato amount), a bay leaf, two cloves garlic (mashed), a quarter teaspoon each fennel seed and cumin seed and a little less ginger.
