a plea

i took boy to the korean market today (really a pan-asian market)... i wanted to show him that we don't need to pay exorbitant prices for cassava (yuca/tapioca), malanga, taro, etc.

while there, i noticed several dried veggies/roots from the campanula genus: bellflower and platycodon among them. does anyone know how to use these? i don't know if they're used as foods or merely as herbal supplements...

also, does anyone have recipes using burdock, lotus root, cassava, etc? i need very simple recipes, as boy isn't combining too many foods. taro simmered in coconut milk is about as complex as we can get.

i bought some teff grains and teff flour for experimentation...

forbidden foods:
corn, soy, rye, crab, salmon, tuna, chicken, egg, green pepper (avoiding all nightshades, including potato, tomato, eggplant)

since i'm vegetarian, i don't cook ANY animal flesh, although boy will (foreman) grill organically fed/raised flesh.
