Yummy food!
I made a great gluten-free Irish soda bread tonight.
I used this recipe. My flour blend is brown rice, sweet white sorghum, teff, and tapioca. I used a mixture of sultanas and thompson's raisins, soaked them in warm cognac for a few minutes to plump them up.
It's really, really good. We've been eating it spread with butter all evening.
thekdog came over for corned beef & cabbage and we chatted over the food for a couple hours. It was awesome.
I'll share pictures of the bread sometime in a couple weeks. With my laptop out of commission, I'm not downloading/resizing photos.
